Gajar Ka Halwa – Carrot Halwa Recipe – Hi guys! Today we are going to teach you a special winter recipe “Gajar Ka Halwa”. Its one of my favorites. Gajar ka Halwa is one of the most famous Indian Dessert. It’s a sweet pudding associated mainly with the people of North India and the special thing about this is that it is loved by people of all age groups. The main ingredients Of this delicious recipe are gajar (carrot), milk, sugar, ghee and dry fruit. You have to continue cooking until halwa becomes reddish in color. Not only it looks good but tastes heavenly good – A perfect dessert for every function or party. You can also garnish it with some small pieces of dry fruit and khoya slices and then serve to your guest. So let’s start with this delicious recipe.

INGREDIENTS FOR Gajar Ka Halwa
- Milk – 1.5 litre
- Carrots – 1 kg
- Sugar – 200 gm
- Soaked Raisins
- Clarified Butter (ghee) – 100 gm
- Almonds – 50 gm
- Cashews – 50 gm’
HOW TO MAKE Gajar Ka Halwa
QUICK STEPS :
- Take a pan and pour 1.5 liter milk into the pan.
- Turn on the flame and heat the milk until comes to a boil.
- When comes to a boil, add shredded carrots to it.
- Mix it well and stir occasionally.
- Stir it till it thickens.
- After half an hour , stir it in between 2-3 minutes.
- It will take approximate an hour.
- When halwa gets dry, stir it continuously.
- Now add clarified butter (ghee) and mix it.
- Add dry fruit -cashews, almonds, raisins and pistachios.
- Now add sugar and mix thoroughly.
- Our GAJAR KA HALWA is ready.
- Serve and enjoy.
BRIEF COOKING PROCESS :
Preparation : Take 1 kg fresh red carrots. Rinse and peel them. Trim both the ends of carrots and grate them nicely. For grating the carrots use held hand held grater or a food processor. Now chop dry fruit – cashews, almonds, pistachios. Soak raisins in warm water.
Cooking : Take a thick bottomed pan and pour 1.5 l milk into the pan. Turn on the flame and let the milk simmer. When milk comes to a boil, turn the flame to medium. Stir it and add grated carrots. Now simmer it till the milk froth and start reducing slowly and slowly. Stir in interval and keep scraping the sides of the kadhayi and mix the solid milk with cooking mixture. After half an hour you will notice that the raw smell of carrots is now disappearing. You can use mava instead of adding milk but we are making halwa in traditional way. If you will use home-made mawa, it will also take this much time. If you want, you can also make halwa in pressure cooker. To enhance the flavor of halwa use full fat milk. When halwa gets almost dry keep stirring it so that it roast evenly and does not burn in bottom of the pan. Add clarified butter to the pan and simmer it again for 10-12 minutes. Now add crushed or chopped dry fruits( almonds, cashews and pistachios and soaked raisins) to the mixture and roast them too for about 2-3 minutes. Mix it well and add 1/2 tsp of cardamom powder if you want. Now add sugar to the pan you will notice that once again the mixture has become liquefied. Cook it again till it thickens again. This whole process will take 1-1.5 hours.
Now your delicious Indian traditional dessert “Gajar Ka Halwa” is ready. Serve and enjoy.
