Sweet Shankarpali Recipe | Shakarpara | Holi Special : Hey people, I am back again with a new, sweet and simple recipe that will steal your heart. Holi Festivities have begun. Holi is the festival of colors, dance, songs, and obviously of mouthwatering Holi delicacies. It is a festival where people apply colors on their beloved and we also want to color all of you with our love. Now our all recipes will be dedicated to Holi only. So, today we will teach you a Holi special recipe i.e. Shankarpali, commonly known as Shakarpara in North- India. Shankarpali! hmm.. I was wondering if it belongs to Lord Shankar? lol. Basically, it is a sweet snack recipe specially made during the season of festivals like holi, diwali etc. It is also a good tea time snack. It is an easy Indian vegetarian recipe and today we are going to make shankarpalis in two ways. You can fry them or bake them too. So let’s start with the Indian Maharashtrian Shankarpali Recipe.

Method 1 – (Deep frying)
INGREDIENTS FOR Shankarpali Recipe
- Refined Flour (maida) – 2 and half cup
- Semolina( Fine Rava) – 1/2 cup
- Sugar – 1 cup
- Salt – a pinch
- Clarified Butter(moyen) – 2 tbsp
- Oil/pure ghee – for deep frying
HOW TO MAKE
To make Sugar Syrup
- Take 1 cup of sugar in a heavy bottomed pan. Take half cup of water and pour it into the pan. Turn on the flame and let it simmer.
- On the other hand knead dough for Shankarpali, but do keep a watch on sugar syrup also. If you can’t do this, first knead dough and then prepare sugar syrup.
To knead dough
- Take 2 cup of refined flour in a big bowl. Add 1/2 cup semolina to it. The semolina should be very fine.
- Now add 2 tbsp clarified butter (desi ghee) to make shankarpali more crispy or khasta.
- Start rubbing the mixture between your palms or fingers so that each and every particles gets coated with the ghee. Moyen act as a binder.
Mix Sugar syrup and mixture to make dough
- We don’t need to make strings (taar) for this. We will simply melt the sugar and add it to the mixture.
- When Sugar syrup is done, pour the syrup in the mixture and start kneading the dough.
- Add a pinch of salt to enhance the taste of sugar.
- Now bring the mixture together into a hard dough. Avoid lumps.
- Dough is ready. Cover it with damp cloth and keep it aside for 10-15 minutes.
- After 15 minutes ,take a little portion of dough and roll it between your palms to even them.
- Roll it between your palms and try to make the dough little more tight.
- Dust it with some flour.
- Flat each ball with a rolling pin or belan to medium thickness.
- Take a knife and cut it into diamonds.
Deep Frying
- Heat the oil or ghee in a pan.
- Deep-fry, put all the slices into the oil same time but very carefully.
- Deep-fry slices on a medium flame(so that it cook properly from inside) until it turns golden brown in color. Flip them in-between.
- Bring it out of the oil with the help of slotted ladle on tissue paper or kitchen towel to absorb extra oil.
- Now deep-fry the next slot of shankarpali in the same manner.
- Let it rest till it comes to room temperature.
Method 2 (Baked Shankarpali Recipe)
INGREDIENTS FOR Shankarpali Recipe
- Refined Flour (maida) – 2 and half cup
- Semolina( Fine Rava) – 1/2 cup
- Sugar – 1 cup
- Salt – a pinch
- Clarified Butter(moyen) – 4 tbsp
- Full Fat Milk – 1/2 cup
HOW TO MAKE
Making
- Take a saucepan and pour milk into it. Add salt, sugar and clarified butter to it.
- Turn the flame on and let it simmer till comes to a boil.
- When done, turn the flame off and let it cool at room temperature.
- Now take a big bowl and mix refined flour and Semolina (rava/suji).
- Star kneading dough with the help of milk that we prepared.
- Cover the dough with damp cloth and keep it aside for 10-15 minutes.
- After 15 minutes, take a little portion of dough and roll it between your palms to even them.
- Roll it between your palms and try to make the dough little more tight.
- Dust it with some flour.
- Flat each ball with a rolling pin or belan to medium thickness.
- Take a knife and cut it into diamonds.
- Put unbaked shankarpali on baking sheet in a single layer. Make sure to make some gap between each shankarpali.
Baking
- Pre heat oven at 180 degrees C for 25 minutes.
- Now put the baking sheet full of shankarpali into the oven and start baking them for 7-8 minutes.
- When done take out the baking sheet carefully and flip all shankarpalis quickly.
- Bake again for 5-6 minutes.
- Bake the next slot of shankarpali in the same manner.
- Our baked shankarpali are ready.
- Let it rest till it comes to room temperature.
